1 - 2 lb Bag Bueno Posole rinsed thoroughly (3x)
Pour posole into large Dutch oven or Oven Roaster
1 whole white onion peeled
2 - 14 oz tubs thawed Bueno red chili
NOTE: ( I use 2 mild & 1 Hot)
1.5 - 2 lbs Pork stew meat cubed
2 quarts cold water (substitute chicken broth if using chicken see below)
Cook in oven for 4 hrs at 350. Once posole begins to pop, I add seasonings.
Seasonings: 1 T salt
1/2 - 1 t Garlic (or to taste)
1 t Mexican oregano (or to taste)
NOTE: to make Chicken Posole:
Cut up chicken breasts into bite size pieces. Fry the chicken pieces in small amount of olive oil until toasted. Set aside you will add chicken to the the when you add seasonings.
